WHAT YOU NEED
3/4 cup cashews soaked in boiling water (for at least 15 minutes+ if possible)
1/2 lemon, juiced
3 T coconut oil, melted
1/4 cup agave
1/3 cup coconut milk
1 t vanilla
16 goodie girl chocolate chip homestyle cookies
4 T melted butter or coconut oil
HOW TO MAKE
Preheat oven to 350 degrees.
Into a food processor add your cookies and process until a crumb forms. Once crumb is made transfer to a bowl.
Melt butter of choice, and combine with cookie crumb tossing to combine.
Add crumb to an 8x8 pan and press firmly down to pack together. Place in the oven for 20 minutes. Set aside to cool.
Add all ingredients to a blender and blend for 1 minute until smooth. Pour over cookie crust and drop down on a surface a few times to remove air bubbles. Place plastic wrap on top of the cheesecake layer and place in the freezer for at least 4 hours.
Remove from the freezer and cut into squares. It will make 9 -12 bars depending how small you cut!
Store in the freezer, eat right out or allow to soften for ~10 minutes before eating. ENJOY!
