wet:
1/3 cup butter, melted and cooled
1/2 cup peanut butter
1/4 cup brown sugar
1/4 cup maple syrup + 2 T
1 egg
1 t vanilla
2 T milk of choice
dry:
1 cup oat flour
1 cup almond flour
1 T coconut flour
1 t baking powder
1/2 t baking soda
1/2 t salt
HOW TO MAKE
Preheat oven to 350 degrees.Start by whisking your melted butter, brown sugar, and maple syrup together until smooth. Then, whisk in the rest of the wet ingredients until combined.
Fold in your dry ingredients until everything is incorporated.
Place cookie dough in fridge to cool while your oven heats (10-15 minutes).
Roll cookie dough into ~1 1/2 inch balls and place on a parchment lined baking sheet.
If you want, make smaller cookies and add a chocolate chip to the top bake the larger cookies for 10-12 minutes and the smaller cookies for 6-8 minutes.
Just until they start to brown. Store cookies in an airtight container in the fridge.
