A new variation on my peanut butter protein bars! Perfect for an on the go snack.
WHAT YOU NEED
first layer
dry:
1 cup oat flour
1/2 cup plant fusion chocolate protein
2 T flax meal
2 T maca
2 T cacao powder
wet:
1/2 cup peanut butter
1/4 cup agave
3/4 cup milk
1 t vanilla
peanut butter layer:
1/4 cup coconut oil, melted and cooled completely
3 T peanut butter
2 T agave
HOW TO MAKE
In a bowl, mix all of your dry ingredients.
Next, whisk your peanut butter and agave in a saucepan on low heat until combined, add in your milk and vanilla, whisking again until combined. It will begin to get somewhat thick.
Transfer to the bowl with dry ingredients and mix until everything is evenly incorporated.
Press into a parchment lined 8x8 pan, using a spatula to smooth the top to make sure it’s flat and as pressed to the sides of the pan as possible. Cool in the fridge or freezer ~30 minutes.
Once cooled, prepare your top layer. Combine your melted and cooled coconut oil with peanut butter and agave. The mixture will be pretty runny so make sure your base layer is pressed firmly in pan to avoid spilling over the sides. Pour the peanut butter sauce on top and place back in the fridge to solidify.
Cut into bars and keep stored in the fridge.
