Skip the banana bread and try something new with those spotty bananas like these gluten free & vegan peanut butter banana bars. Consider them the distant cousin of banana bread because they still have that richness we all love banana bread for. You can pick and choose your mix ins, I chose chocolate chips, but chopped nuts, seeds, or even frozen berries would probably work! The gluten free flours used are almond and oat, I don’t have recommendations for substitutes since almond flour is kind of trick to sub since it’s really absorbent!
WHAT YOU NEED
wet:
2 flax eggs, 2 tbsp flax meal + 4 tbsp water
2 spotty bananas
1/3 cup agave
3 tbsp brown sugar
1 tsp vanilla
1/2 cup natural creamy peanut butter
2 tbsp coconut oil, lightly melted
1/3 cup + 2 tbsp soy milk
dry:
1 cup oat flour
3/4 cup almond flour
1 tsp baking powder
1/2 tsp baking soda
Dash salt
add ins:
3/4 cup oats
chopped chocolate chips, how much or little as you like
HOW TO MAKE
Preheat oven to 375 F.
Prep flax egg and set aside. Mash bananas and transfer to a bowl with remaining wet ingredients, whisking to combine. Add flax egg and mix again.
Fold in dry ingredients until smooth. Add chopped chocolate and oats, fold to combine.
Transfer to a parchment lined 8x8 baking dish, top with more chocolate chips if you want.
Bake for 35-40 minutes. Cut into bars and store in the fridge. Enjoy your new treats!
