
WHAT YOU NEED
1/2 cup + 2 tbsp brown sugar
1/4 cup cold vegan butter (@meltorganic)
1/3 cup natural creamy peanut butter
1 tsp vanilla
2 tbsp (oat) milk
1/2 cup almond flour + 2 tbsp
1/2 cup cassava flour + 2 tbsp (@thrivemarket)
1/2 tsp baking soda
Dash salt
HOW TO MAKE
14 cookies
Preheat oven to 350 F.
Cream together brown sugar, butter, peanut butter, vanilla, and milk until smooth. I used my standing mixer using the paddle attachement.
Add dry ingredients and mix just until smooth and combined.
Line a baking sheet with a Silpat mat or parchment paper. Scoop about 2 tbsp of batter and roll into a ball. Bake cookies in two separate batches or on two separate pans.
Press down with a fork once in each direction and bake for 12 minutes.

I store mine on the counter in a slasher bag.
