    Peanut Butter Cookies

    WHAT YOU NEED
    1/2 cup + 2 tbsp brown sugar⁣
    1/4 cup cold vegan butter (@meltorganic)⁣
    1/3 cup natural creamy peanut butter⁣
    1 tsp vanilla⁣
    2 tbsp (oat) milk⁣
    ⁣
    1/2 cup almond flour + 2 tbsp⁣
    1/2 cup cassava flour + 2 tbsp (@thrivemarket)⁣
    1/2 tsp baking soda⁣
    Dash salt⁣
    ⁣
    HOW TO MAKE
    14 cookies⁣
    Preheat oven to 350 F. ⁣
    ⁣
    Cream together brown sugar, butter, peanut butter, vanilla, and milk until smooth. I used my standing mixer using the paddle attachement. ⁣
    ⁣
    Add dry ingredients and mix just until smooth and combined. ⁣
    ⁣
    Line a baking sheet with a Silpat mat or parchment paper. Scoop about 2 tbsp of batter and roll into a ball. Bake cookies in two separate batches or on two separate pans.⁣
    ⁣
    Press down with a fork once in each direction and bake for 12 minutes. ⁣
    ⁣
    Enjoy!⁣
    ⁣
    I store mine on the counter in a slasher bag.
