WHAT YOU NEED
Olive oil
2 yellow plantains
4 cloves garlic
1 can beans, of choice (use liquid)
1 1/2 t onion powder
1 1/2 t cumin
1 t oregano
1 t paprika
1 1/2 t chili powder
1/2 t coriander
Salt and pepper to taste
Toppings:
Cilantro
@milkimchi vegan kimchi
@foragerproject cashew yogurt
Salsa
Hot sauce
Avocado
HOW TO MAKE
Heat olive oil in a skillet on medium heat. Add plantains, chopped into half moon shapes. Saute until browned. Add garlic and saute for 30 seconds. Reduce heat to low, add your spices and saute for another 30 seconds. Add the beans, salt + pepper. Allow to simmer on medium low for 15-20 minutes. Adding more water to thin out if the moisture evaporates.
Serve with your choice of toppings!
