Coming from someone who eats about 3 pumpkin pies a season…..these pumpkin bars might be my new favorite pumpkin treat. They are gluten free and vegan too so they accommodate everyone! The recipe is simple and doesn’t require a laundry list of expensive ingredients. The bulk of the recipe is oat flour, almond flour, and pumpkin. You can have the bars as is or top them with your favorite vanilla or cream cheese icing. I hope you love them as much as I do!
