    Pumpkin Spice Pancakes

    gluten-free-oat-flour-buckwheat-pumpkin-spice-pancake-healthy-recipes

    WHAT YOU NEED
    wet:
    2 eggs
    1 1/4 cup pumpkin
    2 T melted coconut oil
    1 t vanilla extract
    1/4 cup oat milk
    2 T agave
    dry:
    1 cup oat flour
    1/4 cup buckwheat flour
    1 t baking powder
    1/2 t salt
    1 t cinnamon
    1/2 t nutmeg
    1/2 t ginger
    1/2 cup chocolate chips

    HOW TO MAKE
    Whisk wet ingredients together. Once smooth add dry ingredients (except the chocolate chips) to wet and fold until smooth. Add in more milk if it is too thick. Mix in chocolate chips. Allow the batter to sit for 5-10 minutes so the flour can absorb the liquid. Cook on medium heat in coconut oil or butter.
