    Savory Garlic + Ginger Tofu

    Serves 2
    WHAT YOU NEED
    tofu:
    1/2 tofu block, pressed of liquid
    Ginger powder
    Garlic powder
    Onion powder
    Tamari

    butternut:
    1/2 butter nut
    2 T melted coconut oil
    Salt

    broccoli:
    1/2 bunch of broccoli
    1 T olive oil
    Salt and pepper

    HOW TO MAKE
    Preheat oven to 375 degrees, everything will be cooked in here!

    Press tofu for 10 minutes, and cut into small slabs. Lay onto a baking pan lined with parchment or silpat mat. Drizzle with tamari on both sides. Season each piece, top and bottom, with the seasonings ~1/4 t each on both sides. Just enough to coat. Bake in oven for 30 minutes flipping half way.

    Chop your butternut into small pieces, toss in melted coconut oil and salt. Lay on a baking pan lined with a silpat mat or parchment paper. Bake for 30 minutes or until desired crispiness.

    Chop broccoli into bite sized pieces, toss in olive oil, salt and pepper. Lay onto baking pan with squash. Bake for 20 minutes. Add lemon after you take it out of the oven you want.

    Serve everything with rice or quinoa cooked in broth.
