For the weeknights when you’re in a rush and want a quick, nutritious, and filling dinner! Make these patties ahead of time, freeze individually, and toss in the oven when you need them.
makes 5 patties
WHAT YOU NEED
1 can kidney beans, drained and rinsed)
2 T tomato paste
1 T garlic powder
1 t onion powder
2 T coffee rub
1 t paprika
1 t cumin
2 T nutritional yeast
1 t salt
1/2 t black pepper
1 T worcestershire sauce
1 T olive oil
1 cup cooked quinoa (1/2 cup uncooked)
HOW TO MAKE
Preheat oven to 400 degrees.
Cook the quinoa as instructed on packaging.
While the quinoa is cooking, add the remaining ingredients into a large bowl and mash together with a potato masher.
Add in your quinoa once it is finished cooking, and mash together until combined.
Make patties, it will make 5-6.
Place on a baking pan and cook for ~30 minutes, flipping half way, until golden brown.
I served mine with a spicy aioli, dijon mustard, avocado, tomato, onion, and spinach.
