    Smoky Vegan Mac & Cheese

    Whether you don’t have cheese in the house, are vegan, or can’t have lactose, this smoky vegan mac and cheese will hit the spot and cure that craving! Made from sweet potato and hemp hearts this is such an easy sauce to prepare and is nut free!

    Serves 2⁣
    WHAT YOU NEED 
    4 cloves garlic, roughly chopped⁣
    1/2 tsp oregano⁣
    1 tsp paprika⁣
    ~1/2 tsp salt, more to taste⁣
    1 1/2 cups sweet potato (1 small potatoe), skin removed, cubed ⁣
    1/3 cup hemp hearts⁣
    1 1/2 cup water⁣
    1/2 cup broth ⁣
    1/4 cup nutritional yeast⁣
    1 tsp Dijon mustard⁣
    1 tbsp lemon juice ⁣
    4-6 oz pasta of choice⁣
    ⁣
    to serve:⁣
    Red chili flakes ⁣
    Chopped kale, optional⁣
    ⁣
    HOW TO MAKE
    In a medium saucepan begin sautéing garlic and sweet potato for 5-10 minutes. Meanwhile blend your hemp hearts, water, and broth together until a smooth “milk” forms. Set aside. ⁣
    ⁣
    Add paprika, oregano, and salt to the sweet potatoes and saute for 30 seconds. Pour in hemp mixture and allow to simmer until potatoes are fork tender ~15-20 minutes. ⁣
    ⁣
    Begin boiling your pasta water and cook according to package. Reserve 1 cup pasta water to thin out sauce if needed.⁣ Transfer noodles back into pot after straining.
    ⁣
    Transfer sweet potato mixture to a high speed blender with nutritional yeast, dijon mustard, and lemon juice. Blend on high until a smooth sauce forms. Pour over noodles and heat on medium-low tossing frequently until your desired thickness. The longer you let it heat the more it will thicken. Serve with kale. Add some of the reserved pasta water if needed to thin out sauce.
