1 1/2 cup @nutsolaofficial pumpkin spice blend
1 T water
3/4 cup cashews soaked in boiling water (for at least 15 minutes+ if possible)
1/2 lemon, juiced
3 T coconut oil, melted
1/4 cup agave
1/3 cup coconut milk
1/3 cup pumpkin
1/4 t ginger
1/4 t nutmeg
1/2 t cinnamon
HOW TO MAKE
Blend nutsola until a semi fine texture, transfer to a bowl and add 1 T water. Spread onto a parchment lined 8x8 baking pan and press down to an even layer.
Blend all the filling ingredients together until a creamy texture (at least 1 minute). Taste test and add more spices if you think it needs it!
Pour on top of the crust and smooth it flat. Tap the pan on the counter a few times to get bubbles out and cover and freeze for at least 4 hours.
Once frozen, cut into pieces and store in the freezer in an airtight container. Let thaw about 15 minutes before you eat, and enjoy!
